Gluten-Free Pasta and Meatballs

With our son needing a gluten-free diet, we have searched high and low for fun, tasty recipes that even he would enjoy. The following is one such recipe. All kids love spaghetti and meatballs, right? We found a fun way to prepare homemade spaghetti and meatballs and do it completely gluten-free.

I make my own gluten-free breadcrumbs by keeping the heels of the gluten-free bread we use regularly, and drying them out. For the meat, I use one pound each of ground beef, ground turkey and ground mild Italian sausage.

For the sauce, I use what I’ve prepared homemade. You can use your favorite pasta sauce.

While the meatballs were baking, I had the water boiling for the pasta and cooked it until it was al dente (slightly chewy), drained it and added it to the sauce I had warming up in a large pan. We use white rice noodles (spaghetti, elbow mac, etc.). The consistency is nice and they taste great! We have been able to find them at WinCo or a local natural food store.

When the meatballs were done baking I added them to the pasta and sauce mixture, gave it a quick stir and it was ready to serve. If you like, you can garnish with dried leaf parsley or basil. After it’s been dished up I always like to top it off with grated parmesan cheese.

Gluten Free Blueberry Scone Bread (Recipe Included)

Last month I decided to try making gluten free blueberry scones for my family. The recipe I found was such that when I put it all together, it was more of a bread batter. So by adding more brown sugar and baking in bread pans, we ended up with a great gluten free breakfast blueberry scone bread.

My family enjoyed it so much; I ended up making extra loaves to give away to family for Christmas. We continue to get great feedback on this recipe.

Gluten-Free Blueberry Scone Bread

Many of my gluten free recipes lately have been made with Namaste’s Perfect Flour Blend gluten free baking flour mix. We have been able to get quite a bit of it at our Costco. We have also seen it on Ebay or at your local natural food store. If you can’t get it, you can try using a custom mix such as the ones linked below.

Gluten-Free Blueberry Scone Bread

Here is the recipe for my blueberry scone bread.

  • 2 cups Namaste Perfect Flour Blend
  • 1 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, chilled
  • 1 cup fresh or frozen blueberries (add at end if frozen)
  • 3/4 cup half-and-half cream
  • 1 egg
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut butter into mixture of flour, sugar, baking powder, and salt. Add blueberries and toss to mix.
  3. In separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Don’t over handle.
  4. Pour into greased bread pan(s).
  5. Bake for 50 – 60 minutes or until a toothpick comes out clean.
